Delicious Chocolate Lamingtons

Ingredients
For the Sponge
- 3 eggs (room temperature)
- 2 cups Cake Wheat flour
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Milk
- 1 tsp Vanilla Essence
- 3/4 Cup Castor Sugar
For the Chocolate Icing
- 3 cups Icing Sugar
- 3 Tbsp Cocoa Powder
- 4-6 Tbsp Boiling Water
- 1/2 tsp melted butter
- 1/4 tsp Vanilla Essence
- 1 cup desiccated coconut (for coating)
- 160g Butter

Preparation
Preheat the oven to 180 degrees Celsius. Grease and line a 30cm x 20cm baking tray.
Making the Sponge
In a bowl, cream the butter and castor sugar with an electric or hand mixer until light and fluffy (the color should turn pale). Add the vanilla essence and beat. Slowly add the eggs one at a time, mixing completely after each addition.
In a separate bowl, sift together the flour, baking powder, and salt. Mix to combine. Gradually add the flour mixture to the wet ingredients, alternating with the milk, mixing just until combined (do this with a spatula by hand). Pour the batter into the baking tray and bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool for 10-15 minutes before cutting into squares.
Making the Chocolate Icing
Mix the icing sugar and cocoa in a separate bowl. Add the boiling water, melted butter, and vanilla essence. Mix until smooth and shiny. It should be a bit thin to be able to coat the cake, so adjust the water as needed to get the correct consistency.
Coating the Lamingtons
Spread the desiccated coconut on a large plate. Dip the cake squares into the chocolate icing, allowing the excess to drip off, then roll them in the coconut until fully coated.
