Ingredients
For the Cake
- 3 cups Cake Wheat Flour
- 1 tsp Baking Powder
- 3 tsp Ground Cinnamon
- 1/2 tsp Salt
- 1 1/4 cups Vegetable Oil
- 1/2 Cup Sour Cream (room temp.)
- 1 1/14 cups light brown/dark brown sugar
- 1/2 cup granulated sugar
- 3 large eggs (room temp.)
- 1 Tbsp vanilla essence
- 3 medium Apples (peeled and cut into small chunks)
For the Glaze
- 1/2 cup icing sugar
- 1 cup light brown/dark brown sugar
- 1/2 cup heavy cream
- 1/4 cup unsalted butter

Preparation
Preheat your oven to 180°C and prepare a bundt cake pan with non-stick spray. Set aside.
Mixing Ingredients
In a large bowl, whisk together the flour, baking powder, cinnamon, and salt. In a separate bowl, whisk the oil, sour cream, brown sugar, granulated sugar, eggs, and vanilla until creamy.
Add the dry ingredients to the wet ingredients, then gently fold in the apple chunks. Spoon the batter into the bundt pan. Bake for 55-75 minutes, or until an inserted toothpick comes out clean.
Making the Glaze
For the brown sugar glaze, combine the brown sugar, butter, and heavy cream in a saucepan over medium heat. Bring to a boil, stirring often. Leave to boil for one minute, then reduce the heat and simmer for another minute. Remove from the heat and whisk in the icing sugar. Allow the glaze to cool and thicken slightly for about 5 minutes.
Serving
Pour the glaze over the cake right before serving. Garnish with fresh strawberries. Enjoy!
